Colorful salad in papaya dressing

Ingredients for 2 servings:

  • 2 handfuls of mixed leaf salad (spinach, red chard, arugula, etc.)
  • 2 tbsp papaya, diced
  • 2 tbsp pine nuts, roasted
  • 4 tbsp papaya, pureed
  • 2 tbsp vinegar
  • 1 tbsp walnut oil
  • salt and pepper

Instructions

Working time approx. 5 minutes; Total time approx. 5 minutes

Trim and wash the lettuce and place it in a salad bowl with the papaya cubes. Mix the dressing and season to taste. Mix everything together and serve sprinkled with pine nuts.
