Ingredients for 4 servings:
- 350 g meat sausage
- 125g Gouda
- 1 large bell pepper(s), red
- 7 gherkins
- 1 onion(s), white
- 8 radishes
- 7 tbsp herb vinegar
- 2 tbsp rapeseed oil
- 3 tbsp water
- 2 tbsp cucumber juice
- 1 tsp, heaped mustard, medium hot
- 1 pinch(s) of sugar
- salt and pepper
- chives
Instructions
Working time approx. 25 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 25 minutes
Skin the sausage and cut into thin strips. Cut the cheese and gherkins into strips. Deseed and dice the bell pepper. Finely slice the radishes. Peel the onion and slice into rings (or smaller, if desired). Combine everything in a large bowl, then add the vinegar, water, gherkin juice, oil, mustard, and a pinch of sugar. Mix everything thoroughly again and season well with salt and pepper. Refrigerate the sausage salad for 1-2 hours and let it sit. Then mix thoroughly again and season to taste. Sprinkle with chives before serving. Tastes especially good with fresh brown bread.
