Ingredients for 4 servings:
- 1 red bell pepper(s)
- 1 bell pepper(s), yellow
- 5 tomatoes
- 10 radishes
- 1 cucumber(s)
- 3 spring onions
- 3 tbsp olive oil
- 5 tbsp Balsamic vinegar, light
- some salt and pepper
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Cut the bell peppers into thin strips, the radishes into sticks, the cucumber and tomatoes into smaller pieces, and the spring onions into small rings. For the dressing, add olive oil, balsamic vinegar, herbs, and, to taste, pepper and salt, along with a little water, to the chopped vegetables and stir. Serve the salad promptly after dressing, as it will otherwise absorb a lot of broth. It tastes just as good with any pasta dish as it does with grilled food. Variation: Add diced feta cheese for a hearty flavor.
