Ingredients for 4 servings:
- 1 small onion(s)
- 1 garlic clove(s)
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 2 tbsp mustard
- 50 g cream
- 250 g zucchini
- 1 bell pepper(s), yellow
- 1 carrot(s)
- 2 tomatoes or 1 red pepper
- 2 tbsp chives, cut into rolls
- Salt
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
e.g. as a side dish when grilling
Finely chop or mince the onion and garlic and fry in oil. Remove from the heat and mix with lemon juice, mustard, and cream. Peel the zucchini, halve or quarter it lengthwise, cut into 1/2 cm thick slices, and season with salt. Finely chop the bell pepper and carrot, and cut the tomatoes into eighths. Mix everything together. If you have time, let it marinate, and sprinkle with chives.
