Confetti cake, for 12 pieces
We start with the batter: Cream the butter with sugar and vanilla sugar until creamy. The mixture should become lighter and fluffy. Then add the eggs and mix well. It is very important that they are fully combined with the butter. The next step is to add the sour cream and mix well. Once that is done, mix the flour with the salt and baking powder and then stir into the butter and egg mixture as briefly as possible. Once everything has come together to form a smooth batter, fold in the sugar sprinkles. This should be done as quickly and carefully as possible so that the sprinkles do not break and transfer their color to the batter. The batter can then be divided into two 20 cm diameter springform pans lined with baking paper and baked at 170°C (top/bottom heat) for 35-40 minutes. If no batter sticks to the cake when a skewer is inserted after baking, the cake is ready and must cool completely. When the time is right, it’s time to move on to the buttercream. To do this, beat the room-temperature butter with vanilla sugar and salt until the butter is nice and creamy and slightly lighter in color. When it’s ready, add the icing sugar. Once the sugar is fully incorporated, add the milk and beat the frosting on high for another 2 minutes. Then the cakes can be cut to size, spread, assembled and decorated. It’s a good idea to apply the cream in 2 layers so that the crumbs bind. After the first layer of cream, simply place the cake in the fridge for 30 minutes and then you can finish decorating as usual.
