Ingredients for 1 servings:
- 300 g wheat flour type 405
- 1 tsp baking powder
- 90 g powdered sugar
- 1 egg(s)
- 150 g butter
- 200 g cream cheese
- Food coloring, blue
- 50 g sugar
- chocolate chips
- 2 tbsp spread (speculoos cream)
- some fondant, white
Instructions
Working time approx. 30 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 10 minutes
Cream the butter, baking powder, and one egg until fluffy. Then stir in the flour and powdered sugar and knead into a crumbly dough. Cover the dough and chill for 20 minutes. Roll out the dough and, using a plate, cut out a large circle. Use a knife to make wavy cuts just above the halfway point for the eyes. Remove the excess dough and use it to bake small cookies, for example. Bake on a baking sheet lined with baking paper for 15-20 minutes at 160°C (convection oven). Mix the cream cheese, blue food coloring, and sugar to form an even frosting and transfer to a piping bag fitted with a star-shaped nozzle. Roll out the white fondant and cut out two round eyes, then press in chocolate chips for pupils. Cover the baked and cooled cookie with the speculoos cream. Place the fondant eyes on top and pipe the beard and fingernails on top of the blue frosting. Spread the remaining chocolate chips over the speculoos cream.
