Cookies with olive oil

Ingredients for 1 servings:

  • 250 g flour
  • 80 g sugar
  • 40 g agave syrup
  • 2 pinch(s) salt, preferably coarse
  • 100 g olive oil, alternatively other oils
  • e.g. powdered sugar

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Olive oil biscotti

Mix flour, sugar, agave syrup, and salt in a bowl. Pour in the olive oil and knead the ingredients into a dough. Form the dough into cherry-sized balls and place them on a baking sheet lined with baking paper. Press or flatten the “cherries” with a fork. Preheat the oven to 180°C (convection oven not suitable). Place the baking sheet on the middle rack of the oven and bake the cookies for about 10-13 minutes. While the cookies are still hot, generously sprinkle with powdered sugar and let them cool on the baking sheet. The recipe can be expanded at any time with hazelnuts, desiccated coconut, poppy seeds, chia seeds, or chocolate chips. This recipe yields approximately 22 cookies.
