Cooking: Cabbage Rolls

- 1 Fresh white cabbage
- 500 g Mixed minced meat
- 1 Egg
- 2 Discs Toast
- 1 Tl Mustard
- 1 El Sour cream
- Salt and pepper
- 1 Onion
- Caraway seeds
- 400 ml Beef stock
- 1 El Butter
- Clarified butter
- 1 Bay leaf
- 4 Allspice grains
- 1 shot Noilly Prat
- 1 Tl Tomato paste
- Cut out the stalk from the cabbage then add water, salt and caraway seeds and cook until half-soft.
- Mix the minced meat with the egg, soaked toast, salt, pepper, sour cream and mustard, dice the onion, then briefly toss in butter and add to the mince. Mix everything well and season to taste.
- Remove the outer leaves from the cabbage and spread them on the table. Fill with the minced meat, roll up and tie.
- Fry the roulades in clarified butter on all sides. Add tomato paste and fry briefly. Deglaze with the wine and let it boil down.
- Now add the stock and then fill up with enough vegetable water until the roulades are covered. Put in the oven and cook for about 90 minutes at 150C °. Then if you want, you can set the sauce with a little flour.
