Cooking: Plaice in Herb Batter and Spinach

Spinach:

  • 3 El Flour
  • 1 Egg
  • 60 g Flour
  • 50 ml White wine
  • Chervil
  • Parsely
  • Thyme
  • Salt and pepper
  • 250 g Spinach leaves
  • 100 Onion
  • 2 toes Garlic
  • Salt and pepper
  • Nutmeg
  1. Wash the plaice, season with salt and pepper and turn in flour. Mix the egg yolks with 60 g flour and the wine, season with salt and pepper, beat the egg white, add the herbs and finally fold in the egg white.
  2. Pull the plaice through the dough from both sides and fry in hot clarified butter.

Spinach:

  1. Dice the onions in a little butter until translucent, add the garlic and the spinach, cook everything well with salt, pepper and nutmeg to taste.
