Coriander chicken breast

Ingredients for 4 servings:

  • 4 chicken breast fillets
  • 2 garlic cloves
  • 1 chili pepper(s), fresh, green
  • 1 piece(s) ginger, fresh, approx. 2 cm
  • 4 tbsp coriander greens, freshly chopped
  • 1 lime(s), grated peel
  • 3 tbsp lime juice
  • 2 tbsp soy sauce, light
  • 1 tbsp sugar
  • 200 ml coconut milk

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Using a sharp knife, make three slits in the tops of each fillet, then place them in a shallow dish. Mix together the garlic, chili, ginger, chopped coriander, lime zest and juice, soy sauce, sugar, and coconut milk, and spread over the fillets. Cover with foil and refrigerate for about 1 hour. Then remove the meat from the marinade and fry in a pan for about 15 minutes on each side. Meanwhile, heat the marinade in a saucepan and simmer for a few minutes. Serve the fillets with the sauce. Serve with rice and salad. Tip: If you want the sauce to be a bit spicier, add 1 tablespoon of hot chili sauce.
