Ingredients for 4 servings:
- 1 can of corn, approx. 285 g
- 100 g fruit from the can (fruit cocktail)
- 1 small apple
- ½ small onion(s)
- 200 g natural yogurt, preferably Greek
- 4 tbsp mayonnaise
- ½ tsp, str. Curry (Curry Madras), mild
- Parsley
- lemon juice
- Salt
- pepper

Peel the apple, cut it into small pieces, place it in a bowl, and drizzle with lemon juice—this should also act as the acid for the salad. Wash the canned corn, drain about half a can of fruit cocktail and chop it up a bit, peel the onion and finely dice it. Add everything to the bowl with the apples. Add natural yogurt, mayonnaise, fresh, finely chopped parsley, curry powder, salt, and pepper. The amount of curry powder depends on the curry you use. It’s better to season a little more carefully and then adjust the seasoning, as otherwise the curry taste can be too intense and the other ingredients can’t stand out. Simply adjust the dosage to your taste. For a nice yellow color to the sauce, I simply add a little more turmeric. If you prefer a thinner sauce, you can add a little more liquid from the fruit cocktail. It will be fruitier if you add the entire can of fruit cocktail. I also made the salad with just pineapple instead of the fruit cocktail. It’s also really delicious.
