Tortilla chips minced meat casserole

Ingredients for 4 servings:

  • 1 bag of tortilla chips, approx. 450 g
  • 500 g minced meat
  • 1 bell pepper(s), red
  • 1 cup of crème fraîche or sour cream, approx. 200 g
  • 1 jar salsa dip, approx. 250 g
  • 1 pack of grated cheese, approx. 200 g
  • 1 can kidney beans, approx. 400 g
  • 1 can of corn, approx. 250 – 300 g
  • 1 pack of feta cheese, approx. 200 g
  • salt and pepper
  • curry powder
  • Paprika powder

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Brown the ground beef and season with salt, pepper, curry, and paprika. Line the bottom of a baking dish with tortilla chips and spread half of the ground beef on top. Dice the bell pepper and scatter it over the ground beef along with the drained beans and corn. Mix together the salsa and crème fraîche. Then spread half of the sauce on top. Dice the feta and spread it over the sauce. Add the remaining ground beef on top, followed by the rest of the sauce. Spread the remaining tortilla chips on top and sprinkle with the grated cheese. Bake in the oven at 180°C for 25-30 minutes.
