Coronation Chicken

Ingredients for 6 servings:

  • 1 large mango(s), ripe
  • 50 g sultanas
  • 1 kg chicken breast fillet(s), skinless, cooked, cut into 12 mm long strips
  • 150 ml mayonnaise
  • ½ tsp curry powder, mild
  • 1 tbsp mango chutney
  • 1 tsp lemon juice
  • 100 g cashew nuts, roasted
  • salt and pepper
  • 1 tsp sugar

Working time approx. 30 minutes; Total time approx. 30 minutes

This dish was composed for the Queen’s coronation in 1953. Instead of apricots, mango and mango chutney are used.

Peel the mango, remove the flesh around the pit, and cut into strips. Place the chicken, mango strips, and sultanas in a bowl. Mix the mayonnaise with the curry, chutney, sugar, and lemon juice and fold into the chicken mixture. Add half of the nuts and mix. Transfer to a serving platter and garnish with mango strips and nuts. Serve with rice salad or arrange the Coronation Chicken on a green salad. Tip: If you cut the mango and chicken into smaller pieces, this salad can also be used as a spread.
