Soak the gelatin leaves in cold water. If desired, add a little sugar to the strawberry juice and warm it gently. Stir the soaked gelatin into the juice until completely dissolved. Let it cool slightly. Mix the cooled juice into the cottage cheese and refrigerate the cream. If desired, add more sugar to your taste. When the mixture begins to set, pour into cold, rinsed molds and chill completely in the refrigerator. Carefully turn out onto plates, add the vanilla sauce, and sprinkle with the flaked almonds. Tip: Before measuring the juice, add a few fresh or frozen strawberries and mix well.
