Ingredients for 4 servings:

  • 200 g couscous, instant
  • e.g. vegetable broth
  • 2 eggs
  • 150 g grated cheese, e.g. Emmental or Gouda
  • e.g. breadcrumbs
  • 1 tsp parsley
  • some salt and pepper
  • Thyme
  • Turmeric powder
  • Cumin powder
  • Paprika powder, sweet
  • Fat for frying

Instructions

Working time approx. 15 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 35 minutes

Pour boiling vegetable stock over the couscous in a bowl according to the package instructions, let it swell, and then let it cool. Mix in the eggs, grated cheese, parsley, and enough breadcrumbs to form a pliable mixture. Season to taste. Form the mixture into patties and fry them in a pan until golden brown and crispy on both sides.
