Tomato-mozzarella salad

Ingredients for 2 servings:

  • 3 large tomatoes
  • 2 packs of mozzarella
  • 2 bags of ready-made salad dressing mix (spicy garden herbs)
  • 2 cloves garlic
  • 1 tbsp basil, freshly chopped or frozen, heaped tbsp
  • 1 tbsp chives, freshly chopped or frozen, heaped tbsp
  • 6 tbsp olive oil
  • 6 tbsp water, cold
  • 1 tbsp Balsamic vinegar, dark

Working time approx. 25 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 25 minutes

Heat the olive oil in a pan. Finely chop the garlic cloves and fry in the oil until golden. Do not let them brown, as they will taste burnt. Remove from the heat and let cool slightly. Now put the garlic and oil in a bowl and add the salad dressing mix, basil, water, balsamic vinegar, and chives. Then cut the tomatoes and mozzarella into 1.5 cm cubes and toss everything with the dressing. It’s best to let the salad marinate in the refrigerator for at least an hour, especially since the hot oil will otherwise unintentionally warm the salad. If you’re in a hurry, you can also put the dressing in the freezer for a short time or prepare it the day before. This absolutely delicious salad (thanks to the garlic) goes well with almost any pasta or meat dish and I highly recommend it.
