Couscous salad with tender sprouts

Ingredients for 2 servings:

  • 60 g couscous
  • 250 ml salt water
  • 50 g lamb’s lettuce or arugula
  • some olives, black
  • 150 g feta cheese
  • 160 g cucumber(s)
  • 2 large tomatoes
  • 1 handful of sprouts, tender
  • 3 tbsp olive oil
  • some lemon juice
  • Salt

Working time approx. 15 minutes; Total time approx. 15 minutes

Low in fat, rich in vitamins, quick, tasty – what more could you want?

Stir the couscous into 250 ml of boiling salted water, remove from the heat, and let it swell, covered. Meanwhile, wash the lamb’s lettuce or arugula. Finely dice the feta cheese, olives, cucumber, and tomatoes. Place everything in a salad bowl along with the sprouts. Add the couscous, drizzle with olive oil and lemon juice. Mix thoroughly and season with salt. Delicious hot or cold. Serve as a light main course for two or a starter for four.
