Fried potatoes from my dad

Ingredients for 4 servings:

  • 600 g potatoes, mainly waxy
  • salt water
  • 2 bay leaves
  • Salt and pepper from the mill
  • 1 onion(s)
  • 1 garlic clove(s)
  • 80 g ham (Katenschinken), diced
  • 1 small bunch of chives
  • 60 g butter
  • Paprika powder

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Wash the potatoes and boil them in salted water with the bay leaves until tender. Drain the potatoes, peel them, and let them cool. Peel and finely chop the onions and garlic, then cut the potatoes into even slices. Trim and finely chop the chives. Fry the potatoes in a pan with the butter until golden brown and season with salt, pepper, and a pinch of paprika. Add the ham to the potatoes and fry for about 2-3 minutes, then add the onions and fry for another 4 minutes. Finally, briefly fry the garlic and season with salt and pepper if desired. Garnish with the chives just before serving.
