Ingredients for 1 servings:
- 500 g flour
- 250 g butter
- 120 g sugar
- 2 eggs
- 1 pinch of cinnamon
- 1 tbsp rum
- 1 kg apples
- Sugar
- rum
- Cinnamon
Instructions
Working time approx. 1 hour; Cooking/baking time approx. 55 minutes; Total time approx. 1 hour 55 minutes
Knead flour, butter, sugar, and egg into a shortcrust pastry, season with cinnamon and rum. Chill for about 30 minutes. In the meantime, peel and finely slice the apples. Toss in the sugar, cinnamon, and rum, perhaps adding a little lemon juice. Grease a springform pan or line it with baking paper, roll out one-third of the dough, and place it in the pan as the base. Arrange the apples on top, roll out the remaining dough to form the lid, place it over the pan, and press the edges down. If you like, you can brush it with a beaten egg for a nice shine. If you like, you can also add raisins to the filling; you can then soak them in the rum. Don’t be too sparing with the rum, by the way… Bake the cake at 180 degrees (fan oven) for about 45 minutes, then for another 10 minutes in the residual heat.
