Ingredients for 1 servings:
- 300 g crabs, peeled and ready to cook
- 100 g cheese, grated
- 80 g flour
- 80 g butter
- 500 ml water
- 250 ml milk
- 2 sheets of white gelatin
- Water for soaking
- 1 tsp tomato paste
- 1 cube of fish stock (for fish bouillon)
- 4 egg yolks
- 2 tbsp water
- n. B. Flour
- e.g. breadcrumbs
- salt and pepper
- nutmeg
- e.g. oil for frying
- Oil for the mold
Instructions
Working time approx. 30 minutes; Rest time approx. 1 day 4 hours; Cooking/baking time approx. 20 minutes; Total time approx. 1 day 4 hours 50 minutes
Prawn croquettes (my Belgian recipe)
The recipe must be made the day before, as it needs to be refrigerated overnight. It’s best to make the croquettes the next morning so they can still be frozen. Soak the gelatin leaves in cold water. Bring the water to a boil in a saucepan, add the stock cube and let it dissolve. Then add the milk and season generously with pepper and nutmeg, and a little more salt if desired. In another saucepan, melt the butter and add the flour to make a roux. Then, whisk the liquid into the roux, stirring vigorously. Then, add the tomato paste and simmer briefly until thickened. Squeeze out the gelatin and add it along with the cheese. Finally, add the prawns. Grease a baking dish with oil and pour in the mixture. Let everything cool, cover with cling film, and refrigerate overnight to set. The next day, turn out the dish and cut the mixture into rectangular pieces. Carefully roll the croquettes in your hands. Then coat the croquettes in flour, then egg yolk, and finally in breadcrumbs. Place them on a plate lined with aluminum foil to prevent sticking. It’s best to keep the croquettes in the freezer until ready to eat, otherwise they risk falling apart and spilling out during frying. Heat the oil in a deep fryer to 170°C, and fry the frozen croquettes for about 4 minutes, until golden brown. Of course, there are countless different recipes here, including those with fresh crab that still need to be cooked, etc., but this is my Belgian recipe. Tip: Serve the croquettes with a delicious green salad, for example!
