Apple and mascarpone cream with amaretti biscuits

Ingredients for 4 servings:

  • 2 apples of your choice (no green variety)
  • 20 g butter
  • 5 tbsp maple syrup
  • 100 g cream
  • 250 g mascarpone
  • 2 tbsp Amaretto, if desired
  • 100 g low-fat yogurt
  • 1 handful of biscuits (Amarettini)
  • 3 tbsp sugar

Peel, quarter, core, and cut the apples into 3-4 mm thick slices. Sauté in a saucepan with the butter for about 2 minutes. Add the maple syrup, bring to a boil, and remove from the heat. Mix the mascarpone with the yogurt, sugar, and Amaretto, if using, until smooth. Whip the cream until stiff and gently fold in. Divide the apples and syrup between bowls and spoon the cream over the apples. Before serving, crush the amaretti biscuits and sprinkle them on top to keep them crispy.
