Cranberry Mango Mascarpone Cake

Ingredients for 14 servings:

  • 200 g flour
  • 1 tsp baking powder
  • 75 g sugar
  • 1 vanilla sugar
  • 100 g butter
  • 1 egg(s)
  • 250 g quark (low-fat quark)
  • 100 g sugar
  • 200 ml mascarpone
  • 4 egg yolks
  • 4 egg whites
  • ½ tsp cinnamon
  • ½ tsp ginger, grated
  • 1 lemon(s), peel
  • 2 tbsp pudding powder, vanilla
  • 3 mangoes
  • 150 g cranberries, candied
  • 4 cl rum, brown
  • Almond(s), (slivers) as desired

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Knead the dough ingredients into a shortcrust pastry and line a greased 26 cm springform pan with a rim. Peel the mangos, remove the pits, and dice them. Mix them with the cranberries and ginger, then spread them over the dough in the cake pan. Mix the remaining ingredients together to make a glaze, then fold in the beaten egg whites and rum. Pour the quark mixture over the fruit mixture. Sprinkle the almond slivers on top, if desired. Bake in a preheated oven at 200°C (400°F) for approximately 45-55 minutes, then let stand for another 10 minutes in the off position.
