Cranberry Oat Cookies

Ingredients for 1 servings:

  • 100 g butter
  • 150 g flour
  • 75 g sugar
  • 50 g cranberries, dried
  • 50 g oat flakes, fine or coarse
  • 1 egg yolk
  • 1 tbsp cocoa powder
  • 3 tbsp milk
  • 1 pinch of salt

Working time approx. 15 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 57 minutes

Cut the butter into small pieces. Finely chop the cranberries. Knead the butter, oats, cranberries, cocoa powder, milk, flour, sugar, egg yolks, and salt, first using the dough hook of a hand mixer, then briefly and thoroughly with your hands until you have a smooth dough. Shape the dough into a log (approximately 4 cm in diameter) with your hands, cover, and chill for at least 30 minutes. Preheat the oven to 200°C (400°F), fan oven 180°C (350°F), gas mark 4. Cut the log into approximately 20 slices and place the slices on a baking sheet lined with baking paper. Bake the cookies in the preheated oven for about 10–12 minutes. Remove the cookies from the baking sheet and place them on a wire rack to cool.
