Cranberry oatmeal cookies

Ingredients for 1 servings:

  • 100 g oat flakes, flower-soft
  • 100 g spelt flour type 630
  • 100 g sugar
  • 1 pinch of salt
  • 1 tsp cinnamon powder or gingerbread spice, or both
  • 2 tsp, leveled baking powder
  • 1 tsp, leveled baking soda
  • 60 g rapeseed oil
  • 60 ml water
  • 50 g cranberries

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 18 minutes; Total time approx. 28 minutes

Quick vegan cookies

Preheat oven to 180 degrees Celsius. Mix the dry ingredients, from oats to cinnamon. Mix in the oil and water until a smooth, chewy dough forms. Finally, fold in the cranberries. Form balls with your hands, about 25 g in weight. Flatten slightly and place on a baking sheet lined with parchment paper. Bake for about 15-18 minutes, until lightly browned. Cool on a wire rack. They taste best fresh, while still slightly warm. I made 1 tray with 22 cookies.
