Ingredients for 8 servings:

  • 3 eggs
  • 200 g sugar
  • 100 ml oil
  • 200 ml cream
  • 150 ml milk
  • 2 tbsp lemon peel, or orange peel, grated
  • 1 tsp, heaped baking powder
  • 1 packet of vanilla sugar
  • 400 g flour

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour

Airy, delicious

Preheat the oven to 180°C fan/convection oven. Beat the eggs and sugar with a hand mixer on high for 2 minutes. Stir in the milk, oil, grated zest, and cream. Mix the vanilla sugar, baking powder, and flour and add to the liquid mixture in portions, stirring for another 2 minutes. Pour the batter into a greased loaf pan and place in the oven. After 10 minutes, cut a 1 cm deep cut into the cake lengthwise with a knife. Bake the cake for a total of approximately 50 minutes. Don’t forget to do the toothpick test!
