Ingredients for 4 servings:
- 500 g broccoli
- 100 g almond sticks
- 500 ml water
- 2 tsp vegetable stock powder
- 50 ml cream
- nutmeg
- salt and pepper
- chili flakes
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 50 minutes
Briefly toast the almond slivers in a dry pan over medium heat. Wash and trim the broccoli, and cut into small florets. Bring the water to a boil and add the vegetable stock powder, broccoli, and almonds. Simmer the vegetables gently over medium heat for about 30 minutes. Then puree the ingredients with a hand blender. Pour in the cream and season the soup with salt, pepper, and nutmeg. Ladle the soup into bowls and garnish with chili flakes.
