Cream of broccoli soup

Ingredients for 2 servings:

  • 250 g broccoli
  • 150 g celeriac
  • 400 ml vegetable stock
  • 200 ml cream
  • 3 tbsp parsley
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Cut the broccoli into florets and peel and dice the celery. Combine the vegetable broth and cream with the vegetables in a saucepan, bring to a boil, and simmer, covered, for about 15 minutes. Finally, puree the soup and season with salt and pepper.
