Cream of pea soup

Ingredients for 3 servings:

  • 200 g peas, green
  • 400 ml vegetable stock
  • 150 ml milk, 1.5% fat
  • 3 tbsp cream
  • 80 g sugar snap peas
  • Iodized salt with fluoride
  • pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Bring the vegetable broth to a boil in a saucepan and cook the peas for about 15 to 20 minutes. Then add the milk and cream and puree the peas with a hand blender until smooth. Season the soup with salt and pepper. Blanch the mangetout and thinly slice them into strips, then add them to the finished soup. The soup contains approximately 137 kcal per serving.
