Cucumber salad as a side dish, especially delicious as a main course with dumplings

Wash the cucumber, peel if desired, and slice it thinly into a bowl. Add the vinegar and season with salt. Let it stand for about 15 minutes, until the liquid has absorbed a little. Then stir in 2 tablespoons of water and the sour cream until light and fluffy. Season with pepper and, if desired, with salt and vinegar. Stir in finely chopped chives or dill. This salad is delicious as a main course, as a side dish for a barbecue, or with one of my favorite dishes: dumplings—either freshly cooked or sliced cold and pan-fried.
