Creamy Apple Anise Soup with Pumpkin Seed Cheese

The perfect creamy apple anise soup with pumpkin seed cheese recipe with a picture and simple step-by-step instructions.

  • 250 g Pumpkin seeds
  • Water
  • 1 tbsp Nutritional yeast
  • 1 tsp Lemon juice
  • Salt and pepper
  • 1 Pc. Fennel
  • 2 Pc. Apples
  • Aniseed spice
  • Fresh coriander
  • 0,5 tsp Chili

Pumpkin Seed Cheese

  1. Let the pumpkin seeds soak in water overnight. After approx. 8 hours in the mixer, process into an even mixture. Then add the yeast and lemon juice and season with a little salt, pepper and chilli. Now distribute the mixture between two sheets of baking paper and put in the oven for about 40 minutes.

Apple and anise soup

  1. Combine all ingredients in a blender and puree until a creamy consistency is obtained. Sprinkle with a few pumpkin seeds and season with salt, pepper and chilli to taste. Enjoy cold or warm.
