Creamy Apple Anise Soup with Pumpkin Seed Cheese

Ingredients
 

  • 250 g Pumpkin seeds
  • Water
  • 1 tbsp Nutritional yeast
  • 1 tsp Lemon juice
  • Salt and pepper
  • 1 Pc. Fennel
  • 2 Pc. Apples
  • Aniseed spice
  • Fresh coriander
  • 0,5 tsp Chili

Instructions
 

Pumpkin Seed Cheese

  • Let the pumpkin seeds soak in water overnight. After approx. 8 hours in the mixer, process into an even mixture. Then add the yeast and lemon juice and season with a little salt, pepper and chilli. Now distribute the mixture between two sheets of baking paper and put in the oven for about 40 minutes.

Apple and anise soup

  • Combine all ingredients in a blender and puree until a creamy consistency is obtained. Sprinkle with a few pumpkin seeds and season with salt, pepper and chilli to taste. Enjoy cold or warm.
