Creamy Lime Dessert with Tipsy Mango Sauce

  • 3 sheet Gelatin white
  • 2 Eggs
  • 60 g Sugar
  • 1 Fresh lime
  • 1 pinch Salt
  • 50 g Whipped cream

  • 0,5 Fresh mango
  • 1 teaspoon Lemon juice
  • 2 tablespoon Powdered sugar
  • 3 Centiliters Bacardi

Serving

  • Mint leaves

Creamy lime dessert …

  1. Separate eggs. Chill the egg whites. Beat the egg yolks with sugar and 2 tablespoons of hot water until the sugar has dissolved.
  2. Soak gelatine. Squeeze out the lime. Stir lime juice into the egg mixture. Squeeze out the gelatine well, dissolve it and stir in.
  3. Beat the egg whites with a pinch of salt until stiff. Whip the cream until stiff too. When the mixture starts to gel, fold in the egg whites first, then the cream.
  4. Rinse the molds with cold water. Pour in the mixture and refrigerate for approx. 3 hours (or overnight).

  1. Peel the mango, remove the core and cut into small pieces. Put lemon juice and powdered sugar in a saucepan, heat and simmer gently for five minutes. Remove from heat, let cool down a little and puree. Finally stir in the rum.

Serving

  1. Carefully tip the cream out of the molds onto the dessert plate. Pour some of the sauce over it and garnish with mint.
