Wild Rocket Salad with Meatball

Ingredients
 

  • 250 g Lamb minced fresh
  • 1 some Breadcrumbs
  • 1 pinch Minced meat spice
  • 1 Chopped hot peppers
  • 1 Finely chopped onion
  • 2 Garlic cloves finely chopped
  • 1 pinch Sea salt from the mill
  • 1 pinch Black pepper from the mill
  • 1 some Butter
  • 1 some Clarified butter
  • 4 handful Wild rocket leaves fresh from our own garden
  • 1 handful Garlic chives freshly cut into small pieces from our own garden
  • 6 tbsp Extra virgin olive oil
  • 4 tbsp Balsamic vinegar dark
  • 2 tbsp Dijon mustard
  • 2 tbsp Fir honey
  • 1 pinch Sea salt fine
  • 1 pinch Black pepper from the mill
  • 1 Pecorino or and Parmesan

Instructions
 

  • Sauté the vegetables briefly in butter, let them cool and mix with the mince and some breadcrumbs. Season to taste.
  • Form a meatball out of the minced meat and fry it in clarified butter on both sides in a hot wok (I like to woke). I like a lot of roasted aromas. If you don't like them, please sear them less spicy. Let simmer over a low heat.
  • You can see it in the pictures. The leaves of my wild rocket are cut off with scissors. There is no waste and the leaves grow back quickly.
  • I prefer to grow the wild rocket in the garden like the rocket. It is perennial and has a more aromatic taste than the salad ruscola. The taste is reminiscent of peanuts and cress. The gari chives in the salad round off the taste.
  • There are several ways to mix the dressing with the salad: But no matter how, it should adhere well to the rocket leaves. If you like it sweeter, add more honey.
  • Mix all ingredients, add the chives rolls to the dressing and then the washed, tumbled dry rock salad, and mix everything carefully with your hands.
  • Or mix the ingredients and shake vigorously in a glass and pour over the salad just before serving.
  • I make this salad in many variations: with walnuts, pine nuts or even small tomatoes and cheese I use different ones or none at all.
  • The above recipe is just an example recipe and everyone can make it to their taste. The meatball with a mustard dip was delicious with the salad. But it also only tastes good with baquette as a main course.
  • The meatball was all to myself. My sweetheart doesn't really like lamb straight.
