Ingredients for 4 servings:
- 125 g peas (fresh or frozen)
- 1 cup(s) water
- ¼ liter vegetable broth
- 1 bunch of soup vegetables
- 1 bay leaf
- Thyme
- 2 apples
- 2 onions
- 2 tbsp butter
- 1 tsp curry
- 1 cup(s) cream
- 3 tbsp vinegar
- herbal salt
- herbs, fresh
- marjoram
- pepper
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Puree the peas and water in a blender. Bring the vegetable stock to a boil, finely chop the soup vegetables, and add them. Add the bay leaves, thyme, marjoram, and pepper, then add the peas and simmer for 10 minutes. Meanwhile, finely dice the onion and apples and fry them in the melted butter with the curry until golden brown. Add the cream and vinegar to the soup and season to taste. Before serving, spoon some of the apple and onion mixture onto each serving. Sprinkle with fresh herbs to serve.
