Ingredients for 12 servings:

  • 250 g flour
  • ½ tsp baking powder
  • 180 g sugar
  • 1 packet of vanilla sugar
  • 1 pack of pudding powder, vanilla
  • 120 g butter
  • 2 eggs
  • 80 g desiccated coconut
  • 125 ml milk
  • 80 g date(s), diced
  • Jam (apricot jam)
  • Desiccated coconut

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Coconut-Date Bundt Cake

Cream butter, egg yolks, and sugar until fluffy. Sift in the flour, custard powder, and baking powder, alternately with the milk. Fold in the beaten egg whites, desiccated coconut, and dates. Pour the batter into a greased and floured bundt pan and bake at 180°C for about 1 hour. Once cooled, spread with warmed apricot jam and sprinkle with desiccated coconut.
