Crème brûlée with fruit

Ingredients for 6 servings:

  • 1 pear(s)
  • 1 apple
  • 1 tsp lemon juice
  • 2 tbsp orange liqueur
  • 5 egg yolks
  • 100 g sugar
  • 1 tsp vanilla sugar
  • 600 ml sweet cream
  • 6 tbsp brown sugar

Working time approx. 15 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 15 minutes; Total time approx. 2 hours 30 minutes

Peel, halve, and finely dice the pear and apple. Slowly bring the fruit to a boil with the lemon juice and liqueur, then cover and simmer for 5 minutes. Whisk the egg yolks, sugar, and vanilla sugar until creamy. Stir in the cream. Stir over a hot water bath until the mixture thickens. Divide the fruit among six ovenproof ramekins. Pour the cream on top and chill for 2 hours. Preheat the grill to the highest setting. Sprinkle 1 tablespoon of brown sugar over the cream in each ramekin. Place the ramekins on a baking sheet and grill until the sugar caramelizes.
