Ingredients for 4 servings:

  • 100 g red currants
  • 100 g black currants
  • 200 g strawberries
  • 200 g raspberries
  • 3 tbsp Grand Marnier
  • 4 tbsp powdered sugar
  • 1 tbsp vanilla pudding powder
  • 4 dl milk
  • 2 egg whites
  • Powdered sugar for sprinkling

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 35 minutes

Wash the berries, trim if necessary, and chop finely. Mix thoroughly with the Grand Marnier and powdered sugar and let stand for at least 30 minutes. Prepare the vanilla cream according to the instructions, using only 4 dl of milk. Beat the egg whites until stiff (test by cutting) and carefully fold them into the still-hot cream. Pour the berry mixture into a buttered gratin dish or 4 ovenproof ramekins and spread the cream over it. Sprinkle with powdered sugar. Bake in the center of an oven preheated to 250°C (top/bottom heat) for 5 minutes, until small, brown spots form.
