Italian dessert with apples

Cut the peeled apples into coarse slices and place in a baking dish. Add 1/2 glass of water and sprinkle with 2 tablespoons of sugar. Cook in a preheated oven at 160°C for about 40 minutes until soft. Bring the milk to a boil with the cinnamon stick and stir in 3 tablespoons of sugar. Combine the olive oil, butter, and flour in a saucepan and melt over low heat. Add the milk, stirring constantly, until a light cream forms. Remove the pan from the heat and beat in one egg yolk. Spread this cream over the cooked apples. Sprinkle with the crushed amaretti biscuits and pine nuts. Bake in the still-hot oven at 160°C for about 30 minutes. Then let it cool and serve lukewarm.
