Ingredients for 6 servings:

  • 90 g flour
  • 1 egg(s)
  • 1 egg yolk
  • 20 g butter, melted
  • 250 ml milk
  • 250 g smoked salmon or gravlax
  • 2 medium-sized cucumber(s), diced
  • 1 tbsp capers, chopped
  • 1 tbsp mustard, hot or mild
  • 2 tsp lime juice
  • 50 ml sour cream
  • 100 g quark
  • some chives
  • 2 small spring onions, finely chopped

Instructions

Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 20 minutes

Mix the flour, egg, egg yolk, milk, and butter into a smooth, not too thick batter, preferably with a mixer. Cover and let rest for 30 minutes. Meanwhile, for the filling, dice the salmon. Mix together the cream, mustard, quark, cucumber, onion, capers, and lime juice. Then add the salmon cubes. Heat a shallow pan and cook the batter into thin, golden-yellow crêpes. Spread the filling over the crêpes, sprinkle with a little chives, and roll or fold them.
