Red cabbage pancakes with salmon

Ingredients for 2 servings:

  • 150 g flour
  • 150 ml milk
  • 150 g red cabbage, fresh, not from the jar
  • 2 eggs, separated
  • 3 tbsp oil
  • ½ tsp, leveled salt
  • 1 tsp baking powder
  • 100 g crème fraîche
  • 300 g salmon
  • Clarified butter or oil for the pan

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Separate the eggs and beat the egg whites until stiff. Combine the egg yolks with the oil, flour, baking powder, and salt, gradually adding the milk while stirring. Chop the fresh red cabbage and stir in. Then fold in the beaten egg whites. Fry in batches in a pan with oil or clarified butter over medium heat until golden brown. Serve with crème fraîche and salmon. This batch makes about 10 pancakes.
