Ingredients for 3 servings:

  • 250 g flour
  • 500 ml milk
  • 1 pinch of salt
  • 1 tbsp vanilla sugar
  • 4 eggs
  • 1 tbsp cognac
  • 50 g butter

Makes about 12 French, wafer-thin pancakes

Makes approximately 12 wafer-thin French pancakes. Combine flour, milk, salt, vanilla sugar, and eggs. Add the cognac and melted butter, and mix again. Heat a pan over medium heat and add 1 portion of batter, just enough to cover the bottom, and cook for about 2-3 minutes on each side over medium heat. Top the crepes with jam, sugar, cinnamon, cheese, or ham, if desired. After adding the toppings, roll up the crepe slightly and enjoy.
