Crispy Cantuccini

Ingredients for 1 servings:

  • 300 g wheat flour or spelt flour
  • 2 tbsp milk
  • 20 g margarine, semi-skimmed or butter
  • 1 tsp baking powder
  • 3 eggs
  • 1 tsp salt
  • 2 tbsp oat flakes, wholegrain
  • 50 g flaxseed
  • 50 g almond flakes
  • 50 g sunflower seeds or pumpkin seeds

Instructions

Working time approx. 1 hour; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 45 minutes

Very tasty and healthy. Great for on the go and for the office. Makes about 60 pieces.

Make a dough from the first 8 ingredients. Then knead in the almond slivers and kernels. Shape into 3 rolls with a diameter of 3-4 cm and bake at 180°C (preheated) for 10-15 minutes. Then let cool. While the rolls are still soft, cut them diagonally into 1 cm wide slices with a bread knife and bake for another 10 minutes on each side at 180°C until golden brown. I find these little cantuccini simply perfect for a snack. Since I don’t like things that sweet, these little treats are perfect. You can, of course, mix in various nuts and seeds.
