Crispy cheese biscuits

Ingredients for 4 servings:

  • 150 g flour
  • 150 g butter
  • 150 g cheese (medium-aged Gouda or Emmental), coarsely grated
  • pepper
  • 1 egg yolk
  • 2 tbsp milk
  • sesame
  • poppy
  • Caraway seeds
  • Paprika powder
  • Herbs of Provence
  • Grease for the tray

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Make a dough from the flour, butter, and cheese. Wrap in cling film and refrigerate for 1 hour. Roll out the dough and cut out the biscuits using cookie cutters. Place the biscuits on a greased or lined baking sheet. Brush with the egg yolk and milk mixture and sprinkle with seasonings, if desired. Bake in a preheated oven on the middle rack at 180°C (160°C fan-assisted oven) for about 12 minutes until golden brown. The biscuits will keep for about 4-5 weeks if stored in an airtight container.
