Crispy Chicken Wings

Ingredients
 

  • 8 Chicken wings
  • 7 tbsp Soy sauce
  • 1 tsp Dry Sherry
  • 40 g Sesame
  • 40 g Black sesame
  • 1 tbsp Brown sugar
  • 1 tbsp Honey
  • Star anise
  • 2 tbsp Rapeseed oil
  • 1 Lime

Instructions
 

  • Wash the chicken wings and drain them with kitchen paper. Divide the wings at the joint and prick the meat several times with a fork. Mix 1 tbsp soy sauce and sherry and marinate the chicken wings in it for at least 15 minutes.
  • In the meantime, mix the sesame seeds together and toast them without fat. Put on a flat plate. Mix the rest of the soy sauce, sugar, honey, star anise and 4 tablespoons of water, bring to the boil and reduce by about half.
  • Remove the chicken wings from the marinade and pat dry. Heat the oil and fry the chicken wings over a medium heat for 10 minutes on all sides until crispy. Brush the chicken wings with the seasoning sauce on one side and press into the sesame seeds. Squeeze the lime and drizzle over the chicken wings.
