Crispy duck breast

Ingredients for 1 servings:

  • 1 duck breast (French Barbary duck)
  • 1 tsp five-spice powder
  • 2 tsp cornstarch
  • 6 cl soy sauce
  • 4 cl water
  • 500 ml oil for frying

Instructions

Working time approx. 10 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

This duck breast is prepared in such a way that it tastes like the original Chinese

Wash and trim the duck breast, and pat dry. Lightly cut diamond-shaped incisions on the skin-side of the duck breast at intervals of approximately 1 cm and steam in the steamer for approximately 20 minutes. Then pat dry. Mix together the cornstarch, five-spice powder, soy sauce, and water and brush the duck breast with it. Let it dry for 20 minutes. Heat the oil in a deep pan until very hot and fry the duck breast for approximately 2-3 minutes until crispy. Then drain the fat on kitchen paper. Serve with any side dish.
