Crispy Feta in Nut Breading with Sweet and Sour Onion and Orange Side Dish

The perfect crispy feta in nut breading with sweet and sour onion and orange side dish recipe with a picture and simple step-by-step instructions.

For the cheese:

  • 50 g Baguette bread from the day before
  • 100 g Unsalted nut mix, cashews, walnuts, peanuts
  • 200 g Feta cheese
  • 2 Eggs
  • 7 tbsp Wheat flour
  • 4 tbsp Vegetable oil

For the onion and orange side dish:

  • 2 size Red onions
  • 1 tbsp Cold pressed olive oil
  • 1 tsp Sugar brown
  • 1 tbsp Red wine vinegar
  • 1 tsp Macadamia syrup
  • 1 Orange filleted with juice
  • Salt, colored pepper from the mill
  • 0,5 tsp Espelette pepper
  • 1 pinch Ground cloves

To refine:

  • 0,5 tsp Honey
  • 1 tbsp Frozen herbs of Provence

Aside from that:

  • 2 sheet Kitchen roll for degreasing
  1. Briefly roast the baguette in the oven and let it cool down a little. Put in the food processor together with the nut mixture and grind finely. Cut the feta cheese into six equally sized pieces. Place the flour, eggs and breading mixture each in a deep plate. Whisk the eggs. First roll the cheese in flour, then pull it through the beaten eggs, and finally roll it in the nut mixture. Press the breading down a little. Chill until prepared.
  2. For the onion and orange side dish, peel the onions, quarter them and cut into thin strips. Heat the olive oil in a saucepan and sweat the onion strips in it for about 5 minutes. Add the brown sugar and let it caramelize. Deglaze with the red wine vinegar, macadamia syrup and orange juice. Bring to the boil briefly, season with salt, pepper, Espelette pepper and ground cloves. Simmer over low heat for about 10 minutes, stirring occasionally.
  3. In the meantime, heat the vegetable oil in a pan. Fry the breaded feta cheese on all sides until golden brown (always be careful when turning so that the cheese does not leak). Degrease on kitchen roll and let rest briefly.
  4. Add the orange fillets to the onions and heat them with. Stir in the herbs and honey, then season to taste again.
  5. Arrange the fried cheese in portions with the onion and orange garnish and serve. We had a cranberry-poppy-seed paste and a simple cucumber salad with lemon-yogurt dressing as a dip with the cheese. Recipe for the cranberry poppy seed paste in preparation step 6. A taste experience, have fun trying out and enjoying :-).
  6. Dip / Spice Paste: Aromatic cranberry poppy seed paste
