Casseroles: Spicy Potato and Bean Casserole with Mountain Cheese and Fried Onions

Ingredients
 

Spices:

  • 1 tsp Dried savory
  • 600 g Jacket potatoes from the previous day, rest
  • 300 g Meat sausage, rest
  • 4 Discs Breakfast bacon, rest
  • 2 tbsp Vegetable oil
  • 1 size Red Onion
  • 2 small Garlic cloves
  • 1 pole Leek
  • 1 Red peppers
  • 2 tbsp Tomato paste
  • 250 ml Vegetable broth hot
  • 300 g Sieved tomatoes
  • 100 ml Cream
  • 3 tbsp Frozen chives, rest
  • 200 g Grated mountain cheese
  • 2 tbsp Danish fried onions
  • Salt, colored pepper from the mill
  • 0,5 tsp Hickory smoked salt
  • 2 tbsp Smoked paprika powder
  • 1 tsp Papika powder noble sweet
  • 1 tsp Sugar

Instructions
 

  • Clean the beans, cut them into bite-sized pieces and wash them. Cook in boiling salted water with the savory for about 8-10 minutes until al dente and then drain. Peel the potatoes and layer them in a large baking dish. Spread the cooked beans on top. Season lightly with salt and colored pepper.
  • Quarter the sausage and cut into thin slices. Finely dice the breakfast bacon. Peel the onion and garlic cloves. Wash and clean the leeks and peppers. Cut the onion and garlic into small cubes, the leek into rings and the paprika into bite-sized, thin strips.
  • Preheat the oven to 190 degrees (top and bottom heat). Heat the oil in a large pan. Fry the meat sausage and bacon in it for about 5-7 minutes, until the sausage is lightly browned. Remove and spread over the potatoes and beans.
  • Sauté the onion, leek and paprika in the remaining fat for about 5 minutes, then add the garlic and fry for another 5 minutes. Stir in tomato paste and fry briefly.
  • Deglaze with the vegetable stock, the tomato puree and the cream and bring to the boil. Season with pepper, smoked hickory salt, smoked paprika powder, sweet paprika powder and sugar. Simmer for about 5-7 minutes over medium heat. Add about 4 tablespoons of the grated mountain cheese to the sauce and let melt while stirring. Add the chives and season the sauce again, then spread over the casserole.
  • Mix the rest of the cheese with the fried onions and sprinkle over the casserole. Bake in the oven for about 35 minutes until the cheese is golden brown. A fresh, mixed salad tastes good with it. Bon appetit and have fun cooking :-).
