Crispy fried potatoes

Ingredients for 4 servings:

  • 1 kg jacket potatoes
  • 4 shallots
  • 100 g diced ham
  • salt and pepper
  • Paprika powder, sweet
  • Oil for frying
  • Parsley, freshly chopped

Working time approx. 40 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 10 minutes

Boil the potatoes the day before and refrigerate overnight. Peel the potatoes and cut into slices about 1.5 cm thick. Heat plenty of oil in a pan and add the potato slices, covering the bottom of the pan with potato slices. Fry the remaining potato slices in the next batch. Fry on one side at high heat until crispy, seasoning well with salt and pepper. Turn the potato slices over and fry until golden brown on the other side. Remove the potato slices from the pan. Repeat with the remaining potato slices. It’s a bit time-consuming, but it’s worth it. This is the only way to ensure each potato slice is crispy and doesn’t fall apart. Once all the potato slices are golden brown, peppered, salted, and set aside, briefly sauté the diced shallots and ham cubes in the pan. Return all the potato slices to the pan and mix with the shallot and ham mixture, heating briefly again if necessary. Place the fried potatoes on a plate, sprinkle with chopped parsley and enjoy with sour cream, if desired.
