Ingredients for 2 servings:
- 4 m.-sized potatoes, also partly or only sweet potatoes
- 1 egg white
- 2 tbsp olive oil
- Salt and pepper, spices to taste

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes
low in fat, also good with sweet potatoes
Preheat oven to 200°C. Peel the potatoes and cut into not-too-thin sticks. Place them in a bowl of water and let stand for 15 minutes. In the meantime, beat the egg whites until light and fluffy. Line a baking sheet with parchment paper. Remove the potatoes from the water and drain well, then add them to the bowl with the egg whites and mix. Season well with salt and pepper to taste. Add the two tablespoons of olive oil and mix well again. Place the potatoes on the baking sheet and bake for 20 to 30 minutes (depending on the oven) until golden brown.
