Crispy Honey Sriracha Chicken Wings

Ingredients for 2 servings:

  • 1 kg chicken wings, approx.
  • 1 tbsp salt
  • 2 tbsp baking powder
  • 1 tsp black pepper
  • 1 tsp smoked paprika powder
  • 3 tbsp honey
  • 3 tbsp Sriracha sauce, hot
  • 1 tsp rice vinegar
  • some sesame oil
  • possibly sesame
  • possibly spring onion(s)

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes

Mix together the salt, baking powder, pepper, and paprika. Pour half of the mixture over the wings and stir, then pour the remaining mixture over the wings and mix well. Place the wings on a baking sheet and bake in the oven at approximately 200°C (top/bottom heat) for 20 minutes. Don’t worry if the wings look a bit odd after 20 minutes. Turn the wings over and return them to the oven for another 15-20 minutes. Turn them over again. The wings will be in the oven for a total of approximately 60 minutes, or until they are nice and crispy and brown. The baking powder makes the wings crispy and look as if they were fried. For the sauce, in a large bowl, mix the honey and sriracha sauce with a few drops of sesame oil and the rice vinegar. Then add the wings to the sauce and mix well. If desired, you can sprinkle some sesame seeds and/or spring onions over the wings.
