Ingredients for 4 servings:
- 700 g potatoes, waxy
- 2 tbsp oil (sunflower oil)
- 1 tsp iodized salt
- 1 tsp, heaped herbs of Provence

Peel the potatoes and cut them into walnut-sized pieces. Combine the oil, salt, and herbs in a large bowl. Add the potato pieces and mix well. Place the potatoes on a baking sheet. Bake in a preheated oven at 200°C for about 20 minutes.
